Description

A creamy pasta dish featuring penne and a rich silken tofu rosé sauce, perfect for family dinners and gatherings.


Ingredients

  • 8 oz penne pasta
  • 1 cup silken tofu
  • 1 cup crushed tomatoes
  • 1/2 cup vegetable broth
  • 1/4 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions until al dente.
  2. In a blender, combine the silken tofu, crushed tomatoes, vegetable broth, nutritional yeast, garlic, basil, oregano, salt, and pepper. Blend until smooth.
  3. In a pan, heat the olive oil over medium heat. Pour in the blended sauce and cook for 5-7 minutes, stirring occasionally.
  4. Drain the cooked penne and add it to the sauce, tossing to coat evenly.
  5. Serve hot, garnished with fresh basil if desired.

Notes

For extra flavor, add red pepper flakes or lemon juice. Store leftovers in an airtight container for 3-4 days.
