A creamy pasta dish featuring penne and a rich silken tofu rosé sauce, perfect for family dinners and gatherings.
Ingredients

- 8 oz penne pasta
- 1 cup silken tofu
- 1 cup crushed tomatoes
- 1/2 cup vegetable broth
- 1/4 cup nutritional yeast
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the penne pasta according to package instructions until al dente.
- In a blender, combine the silken tofu, crushed tomatoes, vegetable broth, nutritional yeast, garlic, basil, oregano, salt, and pepper. Blend until smooth.
- In a pan, heat the olive oil over medium heat. Pour in the blended sauce and cook for 5-7 minutes, stirring occasionally.
- Drain the cooked penne and add it to the sauce, tossing to coat evenly.
- Serve hot, garnished with fresh basil if desired.
Notes
For extra flavor, add red pepper flakes or lemon juice. Store leftovers in an airtight container for 3-4 days.
