  • 1/2 cup (120 ml) heavy cream
  • 1/4 cup (60 g) unsalted butter

  • 1/4 teaspoon (1 ml) vanilla extract
  • 1/4 cup (30 g) powdered sugar
  • 1/4 cup (30 g) unsweetened cocoa powder
  • Crushed peppermint candies for coating

Instructions

  1. Place the semi-sweet chocolate chips in a heatproof bowl.
  2. In a small saucepan, heat the heavy cream over medium heat until it simmers.
  3. Remove the saucepan from heat and add the unsalted butter to the cream.
  4. Stir until the butter is completely melted and the mixture is smooth.
  5. Pour the hot cream and butter mixture over the chocolate chips.
  6. Let it sit for 2-3 minutes to allow the chocolate to melt.
  7. Stir the mixture until smooth and fully combined.
  8. Add the peppermint extract and vanilla extract to the chocolate mixture.
  9. Mix well until the extracts are fully incorporated.
  10. Cover the bowl with plastic wrap and refrigerate for 2 hours or until firm.
  11. Once firm, scoop tablespoon-sized portions of the chocolate mixture.
  12. Roll each portion into a ball with your hands.
  13. Place the powdered sugar and cocoa powder in a shallow dish and mix them together.
  14. Roll each truffle in the powdered sugar and cocoa powder mixture until coated.
  15. Roll the coated truffles in the crushed peppermint candies.
  16. Place the truffles on a baking sheet lined with parchment paper.
  17. Refrigerate the truffles for at least 30 minutes to set.
  18. Serve the truffles chilled or at room temperature.
