- 1/4 cup (30 g) powdered sugar
- 1/4 cup (30 g) unsweetened cocoa powder
- Crushed peppermint candies for coating
Instructions
- Place the semi-sweet chocolate chips in a heatproof bowl.
- In a small saucepan, heat the heavy cream over medium heat until it simmers.
- Remove the saucepan from heat and add the unsalted butter to the cream.
- Stir until the butter is completely melted and the mixture is smooth.
- Pour the hot cream and butter mixture over the chocolate chips.
- Let it sit for 2-3 minutes to allow the chocolate to melt.
- Stir the mixture until smooth and fully combined.
- Add the peppermint extract and vanilla extract to the chocolate mixture.
- Mix well until the extracts are fully incorporated.
- Cover the bowl with plastic wrap and refrigerate for 2 hours or until firm.
- Once firm, scoop tablespoon-sized portions of the chocolate mixture.
- Roll each portion into a ball with your hands.
- Place the powdered sugar and cocoa powder in a shallow dish and mix them together.
- Roll each truffle in the powdered sugar and cocoa powder mixture until coated.
- Roll the coated truffles in the crushed peppermint candies.
- Place the truffles on a baking sheet lined with parchment paper.
- Refrigerate the truffles for at least 30 minutes to set.
- Serve the truffles chilled or at room temperature.
