- 2 teaspoons (10 ml) espresso
- 2 large eggs

- 3/4 cup (90 g) all-purpose flour
- 1/2 cup (120 ml) peppermint candy, crushed
Instructions
- Preheat your oven to 350°F. Prepare an 8 x 8 baking dish by lining it with aluminum foil, ensuring there’s enough overhang on two opposite sides for easy lifting later. Lightly grease and flour the foil-covered bottom and sides, then set the pan aside.
- In a medium-sized bowl, place the butter and heat it in the microwave on high for 30 seconds. Stir, and if it hasn’t completely melted, heat for an additional 15 seconds.
- Combine the melted butter with sugar, cocoa, and espresso, whisking together thoroughly. Add in the eggs and vanilla extract, and whisk for about a minute until well combined.
- Gently fold the flour into the mixture using a rubber spatula, ensuring it is fully incorporated. Pour the batter into the prepared pan, smoothing it out evenly.
- Place the pan in the oven and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the brownies cool down to room temperature. If you prefer a neater look, you can trim the edges and remove the flaky top crust.
- Break the cooled brownies into small pieces and shape them into 1-inch balls. Roll each ball in crushed peppermint until well coated, then place each one in a small candy or cupcake liner for serving. Enjoy!
