  • 3/4 cup (90 g) all-purpose flour
  • 1/2 cup (120 ml) peppermint candy, crushed

Instructions

  1. Preheat your oven to 350°F. Prepare an 8 x 8 baking dish by lining it with aluminum foil, ensuring there’s enough overhang on two opposite sides for easy lifting later. Lightly grease and flour the foil-covered bottom and sides, then set the pan aside.
  2. In a medium-sized bowl, place the butter and heat it in the microwave on high for 30 seconds. Stir, and if it hasn’t completely melted, heat for an additional 15 seconds.
  3. Combine the melted butter with sugar, cocoa, and espresso, whisking together thoroughly. Add in the eggs and vanilla extract, and whisk for about a minute until well combined.
  4. Gently fold the flour into the mixture using a rubber spatula, ensuring it is fully incorporated. Pour the batter into the prepared pan, smoothing it out evenly.
  5. Place the pan in the oven and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the brownies cool down to room temperature. If you prefer a neater look, you can trim the edges and remove the flaky top crust.
