- 3–4 lbs chuck roast
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 onion, chopped
- 4 carrots, chopped
- 4 potatoes, quartered
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions
- Preheat your oven to 300°F (150°C).
- Heat olive oil in a large Dutch oven over medium-high heat. Season the chuck roast with salt and pepper and sear it on all sides until browned.
- Remove the roast and set it aside.
- Add the chopped onion, carrots, and potatoes to the pot and sauté for about 5 minutes.
- Stir in the garlic and cook for another minute.
- Return the roast to the pot and add beef broth, Worcestershire sauce, thyme, and rosemary.
- Bring to a simmer, then cover and transfer to the oven.
- Roast for about 3-4 hours, or until the meat is tender and falls apart easily.
- Serve and enjoy!

Use fresh herbs for better flavor. Consider adding a bay leaf for extra depth.
