Ingredients

  • 34 lbs chuck roast
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 onion, chopped
  • 4 carrots, chopped
  • 4 potatoes, quartered
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat. Season the chuck roast with salt and pepper and sear it on all sides until browned.
  3. Remove the roast and set it aside.
  4. Add the chopped onion, carrots, and potatoes to the pot and sauté for about 5 minutes.
  5. Stir in the garlic and cook for another minute.
  6. Return the roast to the pot and add beef broth, Worcestershire sauce, thyme, and rosemary.
  7. Bring to a simmer, then cover and transfer to the oven.
  8. Roast for about 3-4 hours, or until the meat is tender and falls apart easily.
