Ingredients

  • 1 lb thinly sliced beef sirloin
  • 1 tablespoon olive oil
  • 1 chopped onion
  • 1 chopped green bell pepper
  • 2 minced cloves garlic
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded provolone cheese

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced beef and cook until browned, then remove and set aside.
  3. Add chopped onion, bell pepper, and garlic to the pot; sauté until tender.
  4. Return beef to the pot and add beef broth; bring to a gentle simmer and cook for 15 minutes.
  5. Stir in heavy cream and shredded provolone cheese, stirring continuously until cheese is melted.
  6. Season to taste with salt and pepper before serving.

Notes

For a thicker soup, mix 1 tablespoon of cornstarch with cold water and stir in gradually.
