Instructions
- Heat olive oil in a large pot over medium heat.
- Add sliced beef and cook until browned, then remove and set aside.
- Add chopped onion, bell pepper, and garlic to the pot; sauté until tender.
- Return beef to the pot and add beef broth; bring to a gentle simmer and cook for 15 minutes.
- Stir in heavy cream and shredded provolone cheese, stirring continuously until cheese is melted.
- Season to taste with salt and pepper before serving.
Notes
For a thicker soup, mix 1 tablespoon of cornstarch with cold water and stir in gradually.
