Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded provolone cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the sliced beef and cook until browned. Remove and set aside.
  3. In the same pot, add onion, bell pepper, and garlic. Sauté until vegetables are tender.
  4. Return the beef to the pot. Add beef broth and bring to a simmer. Cook for 15 minutes.
  5. Stir in heavy cream and shredded provolone cheese. Cook until the cheese is melted and the soup is heated through.
  6. Season with salt and pepper to taste. Serve hot.
