  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 4 ounces mushrooms, sliced
  • 1 cup provolone cheese, shredded
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cauliflower rice (optional for carb-conscious)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add flank steak and cook until browned. Remove and slice thinly.
  3. Add onion, bell pepper, and mushrooms to the same skillet. Sauté until tender.
  4. Mix the vegetables with the sliced steak, adding garlic powder, salt, and pepper.
  5. If using, stir in the cauliflower rice.
  6. Transfer the mixture to a baking dish, top with provolone cheese, and bake for 15-20 minutes until bubbly and golden.
