Description

A cheesy, beefy twist on a comfort food classic that combines rich flavors for a satisfying meal.


Ingredients

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • ½ cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 1 tablespoon olive oil
  • 8 slices provolone cheese (4 for filling, 4 for topping)
  • Fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté the diced green bell pepper and onion for 5 minutes until softened, then set aside.
  3. In a large bowl, mix together the ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, salt, and pepper until well combined.
  4. Press half of the meat mixture firmly into the bottom of a loaf pan.
  5. Layer 4 slices of provolone cheese over the meat, then add the sautéed peppers and onions on top.
  6. Top with the remaining meat mixture, pressing it down to seal the edges well.
  7. Bake for 45-50 minutes. During the last 5 minutes, lay the remaining 4 slices of provolone on top and bake until melted.
  8. Allow the meatloaf to rest for 5-10 minutes before slicing. Garnish with freshly chopped parsley, if desired.

Notes

For a different flavor, feel free to switch up the type of cheese used. Adding a sprinkle of brown sugar on top during the last few minutes of baking enhances sweetness.
