Instructions

  1. Prepare the pineapple by peeling, coring, and cutting into bite-sized cubes.
  2. Dice the avocado and chop the cilantro.
  3. In a small bowl, whisk together lime juice, honey, olive oil, salt and pepper to make the dressing.
  4. Combine the pineapple, avocado, and cilantro in a large bowl.
  5. Pour the dressing over the salad and gently toss to combine.
  6. Serve immediately or refrigerate for up to 24 hours before serving (add avocado just before serving if making ahead).
