  • 3 celery stalks, diced
  • 6 small russet potatoes, peeled and diced

  • 8 cups low-sodium broth
  • 3 Tbsp flour
  • 1 cup milk
  • 1/2 cup heavy cream (optional)
  • 1 tsp fresh parsley
  • 1 cup shredded cheese

Instructions

  1. Cook the bacon in a large pot over medium heat until crisp. Once done, set it aside on a paper towel to drain.
  2. In the leftover bacon fat, sauté the diced onion, carrot, and celery until they soften and become fragrant.
  3. Add the peeled and diced potatoes along with kosher salt, black pepper, and Cajun spice, stirring to combine.
  4. Pour in the low-sodium broth, bringing the mixture to a simmer. Let it cook until the potatoes soften, about 15-20 minutes.
  5. In a separate bowl, whisk together the flour and milk to create a smooth mixture. Stir this into the simmering soup and continue cooking for an additional 5 minutes.
  6. Blend a portion of the soup to achieve a creamy consistency, then return it to the pot.
  7. If desired, add the heavy cream and fresh parsley. Adjust seasoning to taste.
  8. Serve topped with shredded cheese and crispy bacon, garnished with extra parsley for flair.

Notes

For vegetarian options, substitute bacon with olive oil and consider adding smoked paprika. Use an immersion blender for convenience when blending the soup.
