Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Add chopped bell peppers and onions to the skillet and sauté until softened.
- Stir in the beef stock, diced tomatoes, and cooked rice if using. Season with salt and pepper.
- Transfer the mixture to a baking dish.
- If desired, top with shredded cheese.
- Bake in the preheated oven for about 30 minutes or until heated through and cheese is bubbly.
