  • 2 tablespoons olive oil
  • 1 cup pomegranate juice
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh pomegranate seeds for garnish
  • Fresh mint leaves for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat lamb chops dry with paper towels. Combine zaatar, salt, and pepper in a small bowl.
  3. Coat lamb chops evenly with olive oil, then rub the zaatar mixture all over the meat.
  4. Let lamb chops rest at room temperature for 15 minutes to allow flavors to penetrate.
  5. While lamb is resting, prepare the pomegranate glaze. In a small saucepan, combine pomegranate juice, honey, balsamic vinegar, and garlic.
  6. Bring glaze mixture to a boil, then reduce heat and simmer until reduced by half and slightly thickened, about 10 minutes.
  7. Heat an oven-safe skillet over high heat. Sear lamb chops for 2 minutes per side until golden brown.
  8. Transfer skillet to preheated oven and cook for 5-7 minutes for medium-rare, or until desired doneness.
  9. Remove lamb from oven and let rest for 5 minutes. Brush with pomegranate glaze.
  10. Serve lamb chops with additional glaze, garnished with fresh pomegranate seeds and mint leaves.
