- 4 medium potatoes, diced
- 1 can (15 oz) corn, drained
- 1 onion, chopped
- 4 slices bacon, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- 1 tsp garlic powder
- 1 tsp thyme
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set it aside, leaving some drippings in the pot.
- Add the chopped onion to the pot and sauté until translucent.
- Add the diced potatoes, corn, and broth to the pot. Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream along with the garlic powder and thyme. Season with salt and pepper.
- Cook for an additional 5 minutes, then garnish with the crispy bacon before serving.
Notes
For added flavor, consider including minced garlic with the onions or a splash of your favorite herbs. Pair with warm crusty bread or a fresh salad.
