Ingredients

  • 4 slices bacon, chopped

  • Salt and pepper to taste

  • 1 tsp thyme

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set it aside, leaving some drippings in the pot.
  2. Add the chopped onion to the pot and sauté until translucent.
  3. Add the diced potatoes, corn, and broth to the pot. Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
  4. Stir in the heavy cream along with the garlic powder and thyme. Season with salt and pepper.
  5. Cook for an additional 5 minutes, then garnish with the crispy bacon before serving.
