Ingredients

  • 4 medium-sized potatoes washed
  • 4 cup (960 ml) water
  • 1 tablespoon (15 ml) rock salt
  • 1 cup (240 ml) yogurt or buttermilk or sour cream
  • 1 packet chicken breading mix – about a cup
  • 1 teaspoon (5 ml) paprika powder optional
  • 12 cup (360 ml) s oil for frying

Instructions

  1. Pour water into a saucepan and heat until it reaches a boil on medium flame. As the water heats up, slice the potatoes, keeping the skin on, into ¼ inch thick rounds.
  2. Once the water is bubbling, add the salt, followed by the potato slices. Let them cook for 3 minutes. Pour everything into a strainer to remove the water and allow the potatoes to cool slightly.
  3. Move the potato slices into a mixing bowl. Add the yogurt and mix until every slice is evenly covered.
  4. Pour 1-2 cups of oil into a large skillet, ensuring it reaches about ¾-inch in depth. Warm the oil over medium heat until a drop of water sizzles when added.
  5. Combine the chicken breading mix and paprika on a plate or shallow dish. Take each potato slice and coat it completely with the breading mixture.
  6. Gently place the coated potatoes into the hot oil immediately to prevent the coating from becoming soggy, and fry them for 2-3 minutes per side until they are golden brown, adjusting the heat as needed.
  7. Take the fried mojos out and place them on a plate lined with a paper towel or a rack to drain excess oil.
  8. Arrange the cooked potatoes in a basket or serving dish and serve them with gravy.
