Ingredients

  • 4 cups vegetable broth

Instructions

  1. In a large pot, melt the butter over medium heat and sauté the onion until translucent.
  2. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Use an immersion blender to puree the soup until smooth (or transfer to a blender in batches).
  4. Stir in milk or cream, and season with salt and pepper.

Notes

For a chunkier texture, blend only half the soup and mix it back in. Season during cooking for better flavor depth.
