Ingredients

  • 12 frozen or homemade potstickers
  • 4 cups low-sodium chicken broth
  • 1 tablespoon fresh ginger, grated
  • 3 garlic cloves, minced
  • 2 green onions, chopped (plus extra for garnish)
  • 2 tablespoons low-sodium soy sauce
  • 1 cup sliced carrots
  • 2 cups chopped bok choy
  • 1 teaspoon sesame oil

Instructions

  1. In a large pot over medium heat, pour in the chicken broth.
  2. Add the grated ginger and minced garlic. Allow the mixture to simmer for approximately five minutes.
  3. Carefully add the potstickers to the bubbling broth. Cook for about 5-7 minutes, or until they float to the surface.
  4. Stir in the sliced carrots and chopped bok choy. Cook for an additional 3-5 minutes until the vegetables become tender yet vibrant.
  5. Season with low-sodium soy sauce to taste, adjusting as needed.
  6. Just before serving, sprinkle chopped green onions on top and drizzle with sesame oil.

Notes

While cooking, ensure potstickers sit in a single layer for even cooking. Fresh ingredients enhance flavor and consider adding red pepper flakes or mushrooms for extra depth.
