Ingredients

  • 12 frozen or homemade potstickers
  • 4 cups low-sodium chicken broth
  • 1 tablespoon fresh ginger, grated
  • 3 garlic cloves, minced
  • 2 green onions, chopped (plus extra for garnish)
  • 2 tablespoons low-sodium soy sauce
  • 1 cup sliced carrots
  • 2 cups chopped bok choy
  • 1 teaspoon sesame oil

Instructions

  1. In a large pot over medium heat, pour in the chicken broth.
  2. Add the grated ginger and minced garlic to the broth and allow it to simmer for about five minutes.
  3. Carefully add the potstickers to the bubbling broth. Cook them until they float, which usually takes about 5-7 minutes.
  4. Stir in the sliced carrots and chopped bok choy. Cook for an additional 3-5 minutes or until the vegetables are tender but still vibrant.
  5. Season the soup with soy sauce to taste.
  6. Just before serving, sprinkle chopped green onions on top and drizzle sesame oil for an added depth of flavor.

Notes

Use homemade broth for a richer flavor. Experiment with different vegetables for variety, and add a cornstarch slurry if you prefer a thicker soup.
