- 16 ounces (454 g) pasta, such as fettuccine pasta or any other pasta
- 2 tablespoons (30 ml) vegetable oil
- 5 cloves garlic, minced
- 1 ¼ cups (300 ml) coconut cream
- 1 cup (240 ml) pumpkin puree
- 1/2 teaspoon (3 ml) fine sea salt
- 1/4 teaspoon (1 ml) ground black pepper
- 1/2 teaspoon (3 ml) dried sage, or 1 tablespoon (15 ml) crumbled/chopped fresh sage or thyme
- 1/2 teaspoon (3 ml) freshly grated nutmeg
- ¾ cup (90 g) vegan Parmesan cheese
- 3/4 cup to 1 cup (180–240 ml) reserved pasta water, start with 3/4 cup in sauce
Instructions
- Cook the pasta according to the package directions in a large pot of generously salted water until it reaches a firm yet tender texture. Drain the pasta, keeping a cup of the cooking liquid aside, and set the pasta aside for later use.
- On medium heat, heat the vegetable oil in a skillet. Add the minced garlic and cook while stirring until the garlic releases its aroma, about 2-3 minutes. Ensure the temperature isn’t too high to avoid burning the garlic.
- Gradually pour in the coconut cream, whisking slowly to blend it into the garlic and oil mixture. Incorporate the pumpkin puree, whisking until it becomes a smooth part of the sauce.
- Mix in the fine sea salt, ground black pepper, sage or thyme, and freshly grated nutmeg. Stir well to ensure everything is well blended.
- Add the saved pasta water to the mixture, stirring to combine. Then, incorporate the cooked pasta, tossing it to ensure it’s evenly coated with the sauce. Turn off the heat and let the pasta rest in the sauce, stirring occasionally, for an additional 3-5 minutes. Taste and adjust with more pasta water, sea salt, and vegan Parmesan if needed. You can also add more coconut cream if desired.
- Top with extra vegan Parmesan and crispy sage if you wish. Enjoy your meal!
