  • – 2 Large Eggs
  • – 1/4 cup (60 ml) Sour Cream
  • – 1 tsp (5 ml) Vanilla Extract
  • – 4 oz (113g) Cream Cheese
  • – 2 tbsp (30 ml) Salted Butter
  • – 1 tsp (5 ml) Vanilla Extract
  • – 1 1/2 cups (180g) Powdered Sugar
  • – 3-4 tbsp (53 ml) Heavy Cream

Instructions

  1. Set your oven to 350 degrees F and prepare a 9×5 loaf pan by lining it with parchment paper.
  2. In a large mixing bowl, combine the flour, baking soda, salt, and spices, and whisk them together until well blended.
  3. In another large bowl, mix the pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, sour cream, and vanilla extract. Whisk this mixture for 2-3 minutes until it turns smooth.
  4. Gradually add the dry mixture to the pumpkin mixture, stirring until everything is well combined. Transfer the batter into the prepared loaf pan and bake for 75-80 minutes. Let the bread cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely.
  5. For the frosting, place the cream cheese and butter into a stand mixer with the paddle attachment. Beat together for 2 minutes. Then, incorporate the powdered sugar, vanilla extract, and heavy cream, mixing until everything is fully blended, about one minute.
