Ingredients

- – 2 Large Eggs
- – 1/4 cup (60 ml) Sour Cream
- – 1 tsp (5 ml) Vanilla Extract
- – 4 oz (113g) Cream Cheese
- – 2 tbsp (30 ml) Salted Butter
- – 1 tsp (5 ml) Vanilla Extract
- – 1 1/2 cups (180g) Powdered Sugar
- – 3-4 tbsp (53 ml) Heavy Cream
Instructions
- Set your oven to 350 degrees F and prepare a 9×5 loaf pan by lining it with parchment paper.
- In a large mixing bowl, combine the flour, baking soda, salt, and spices, and whisk them together until well blended.
- In another large bowl, mix the pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, sour cream, and vanilla extract. Whisk this mixture for 2-3 minutes until it turns smooth.
- Gradually add the dry mixture to the pumpkin mixture, stirring until everything is well combined. Transfer the batter into the prepared loaf pan and bake for 75-80 minutes. Let the bread cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely.
- For the frosting, place the cream cheese and butter into a stand mixer with the paddle attachment. Beat together for 2 minutes. Then, incorporate the powdered sugar, vanilla extract, and heavy cream, mixing until everything is fully blended, about one minute.
- Spread the cream cheese frosting over the top of the cooled pumpkin bread.
