Ingredients
- – 2 cups (248g) all-purpose flour
- – 3/4 cup (150g) granulated sugar

- – 1 cup (240 ml) pure pumpkin puree
- – 1/4 cup (59ml) vegetable oil
- – 1 teaspoon (5 ml) vanilla
- – 1/2 cup (118ml) nonfat milk
- – 1/4 cup (57g) vegetable oil
- – 1/4 cup (31g) all-purpose flour
- – 1 cup (200g) brown sugar
- – 1 tablespoon (15 ml) cinnamon
- – Pinch of salt
Instructions
- Set your oven to 350°F and lightly coat a 9×9-inch baking dish with nonstick spray.
- In a large mixing bowl, combine the two cups of flour, granulated sugar, baking powder, salt, and pumpkin pie spice. Use a whisk to blend them together. Incorporate the pumpkin puree, vegetable oil, vanilla extract, and milk, stirring until the mixture is smooth. Pour this batter into the prepared baking dish and set it aside.
- In a separate smaller bowl, combine melted butter with a quarter cup of flour, brown sugar, cinnamon, and a pinch of salt. Use a fork to mix these ingredients until they are well combined. Evenly distribute this mixture over the top of the pumpkin cake batter.
- Place in the oven and bake for 30 to 40 minutes, or until a toothpick inserted about two inches from the edge of the pan comes out clean.
