  • 2 tsp (10 ml). paprika
  • 4 chives, cut into small pieces

Instructions

  1. Arrange the eggs in a single layer in a pot and pour in enough water to submerge them by two inches. Heat until boiling, then lower the heat, cover, and let cook for one minute. Take off the heat and let them sit, still covered, for 14 minutes, then rinse them with cold water.
  2. Gently crack the shells and peel the eggs under cool running water.
  3. Slice the eggs in half lengthwise. Scoop out the yolks into a small bowl and arrange the egg whites on a serving dish. Mash the yolks with a fork, then mix in the mayonnaise, lemon juice, and Dijon mustard. Add salt and pepper to taste.
  4. Distribute the yolk mixture evenly into the egg white halves and smooth the tops.
  5. Sprinkle paprika generously over the yolk mixture, covering it completely. Use a sharp paring knife to create lines in the paprika-covered yolk to mimic a pumpkin’s appearance.
  6. Position a piece of chive on top of each yolk mixture to resemble a stem before serving.
