Ingredients

  • – 1/2 cup (120 ml) vegetable oil
  • – 2 cups (480 ml) whole milk
  • – 4 eggs, yolks separated from whites
  • – Pinch of cream of tartar
  • – 1 1/2 cups (180 g) powdered sugar
  • – 1 tsp (5 ml) vanilla extract
  • – 1 tsp (2 g) ground cinnamon
  • – 1 tsp (2 g) pumpkin pie spice
  • – 1 cup (240 g) pumpkin puree, not pumpkin pie filling
  • – 1 cup (120 g) all-purpose flour

Instructions

  1. Set your oven to a temperature of 325°F.
  2. Prepare an 8×8 or 9×9 inch square baking pan by lining it with parchment paper.
  3. Gently heat the milk until it’s just warm to the touch, then set it aside.
  4. Whip the egg whites and cream of tartar until they reach stiff peaks.
  5. Allow the melted butter to cool down to room temperature.
  6. Combine the egg yolks and powdered sugar, beating until the mixture is light and frothy. Incorporate the vanilla extract, ground cinnamon, pumpkin pie spice, and cooled butter.
  7. Stir in the flour, then blend in the pumpkin puree with 1/4 cup of the milk.
  8. While mixing at a low speed, gradually add the rest of the milk.
  9. Gently fold the beaten egg whites into the batter using a spatula.
  10. Transfer the batter into the prepared baking pan and bake for 60 to 65 minutes.
  11. Allow the cake to cool completely, ideally refrigerating it to ensure it sets properly before cutting.
  12. Slice the cake into squares and enjoy.

Notes

  • Be careful when folding in beaten egg whites to keep the cake’s airy texture.
  • Enhance the pumpkin flavor by adding more pumpkin pie spice or cinnamon.
  • For a richer taste, replace some vegetable oil with melted butter.
