- – 2 cups (480 ml) whole milk
- – 4 eggs, yolks separated from whites
- – Pinch of cream of tartar
- – 1 1/2 cups (180 g) powdered sugar
- – 1 tsp (5 ml) vanilla extract
- – 1 tsp (2 g) ground cinnamon
- – 1 tsp (2 g) pumpkin pie spice
- – 1 cup (240 g) pumpkin puree, not pumpkin pie filling
- – 1 cup (120 g) all-purpose flour
Instructions
- Set your oven to a temperature of 325°F.
- Prepare an 8×8 or 9×9 inch square baking pan by lining it with parchment paper.
- Gently heat the milk until it’s just warm to the touch, then set it aside.
- Whip the egg whites and cream of tartar until they reach stiff peaks.
- Allow the melted butter to cool down to room temperature.
- Combine the egg yolks and powdered sugar, beating until the mixture is light and frothy. Incorporate the vanilla extract, ground cinnamon, pumpkin pie spice, and cooled butter.
- Stir in the flour, then blend in the pumpkin puree with 1/4 cup of the milk.
- While mixing at a low speed, gradually add the rest of the milk.
- Gently fold the beaten egg whites into the batter using a spatula.
- Transfer the batter into the prepared baking pan and bake for 60 to 65 minutes.
- Allow the cake to cool completely, ideally refrigerating it to ensure it sets properly before cutting.
- Slice the cake into squares and enjoy.
Notes
- Be careful when folding in beaten egg whites to keep the cake’s airy texture.
- Enhance the pumpkin flavor by adding more pumpkin pie spice or cinnamon.
- For a richer taste, replace some vegetable oil with melted butter.
