  • 1 tablespoon (15 ml) baking powder (15 grams)
  • 1/2 teaspoon (3 ml) ground cinnamon (1 gram)
  • 1/2 teaspoon (3 ml) ground nutmeg (1 gram)
  • 1/2 teaspoon (3 ml) salt (3 grams)
  • 3/4 cup (180 ml) milk (180 milliliters)
  • 1/2 cup (120 ml) pumpkin puree (120 grams)
  • 1 large egg
  • 2 tablespoons (30 ml) melted butter (28 grams)
  • 1 teaspoon (5 ml) vanilla extract (5 milliliters)
  • Maple syrup for serving

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  2. In a separate medium bowl, combine the milk, pumpkin puree, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients.
  4. Stir until just combined, being careful not to overmix.
  5. Heat a non-stick skillet or griddle over medium heat.
  6. Lightly grease the skillet with a small amount of butter or oil.
  7. Pour 1/4 cup of batter onto the skillet for each pancake.
  8. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  9. Flip the pancakes and cook for another 2-3 minutes until golden brown.
  10. Repeat with the remaining batter, greasing the skillet as needed.
  11. Serve the pancakes warm with maple syrup.
