Ingredients

  • 1/2 cup (120 ml) creamy natural peanut butter (or sub almond butter or pecan butter)
  • 1/3 cup (80 ml) pure maple syrup (or sub honey)
  • 1/2 cup (60 g) toasted pecans (or sub walnuts)
  • 2 tsp (10 ml) pumpkin pie spice
  • 2 tbsp (30 ml) flaxseed meal
  • 1 tbsp (15 ml) chia seeds
  • 1/4 tsp (1 ml) sea salt
  • 2 cups (180 g) old-fashioned rolled oats, gluten free if desired
  • For the topping:
  • 1/4 cup (60 g) dairy-free white or dark chocolate chips
  • 1 tsp (5 ml) coconut oil
  • Cinnamon

Instructions

  1. Place all ingredients, except for the chocolate and coconut oil, into a food processor. Blend them until they’re thoroughly mixed and form a dough-like consistency, leaving some nut pieces intact. You might need to pause occasionally to scrape the sides of the bowl with a spatula. Continue processing until everything is blended. The mixture will be dense, which is what you want!
  2. Using a medium-sized cookie scoop, portion out the dough and shape it into balls. You should end up with roughly 15 balls. Arrange the energy bites on a parchment-lined baking sheet and transfer them to the freezer for half an hour.
  3. Combine the chocolate chips and coconut oil in a bowl suitable for microwaving. Heat in 30-second bursts until the chocolate has melted. Drizzle the melted chocolate over the balls, then lightly sprinkle with cinnamon. Return them to the freezer for another 10 minutes. Store the balls in an airtight container in the freezer, where they can be kept for up to three months. Enjoy them directly from the freezer. If they are too firm, allow them to rest at room temperature for 5 to 10 minutes.
