Ingredients
Scale
- 1/4 cup (56g) unsalted butter, melted
- 3 tablespoons (45ml) vegetable oil
- 3/4 cup (165g) packed light brown sugar
- 1 large egg
- 1/2 cup (120ml) pure pumpkin puree
- 1/2 teaspoon (5ml) pure vanilla extract
- 1/2 cup (120ml) milk
- 1 1/2 teaspoons (8 ml) baking powder
- 1/4 teaspoon (1 ml) baking soda
- 1/2 teaspoon (3 ml) salt
- 1 teaspoon (5 ml) pumpkin pie spice
- 1 1/2 cups (215g) all-purpose flour
- 1/3 cup (45g) chopped toasted pecans plus extra for topping
- 1/2 block (125g) cream cheese, softened
- 3 tablespoons (42g) unsalted butter, softened
- 3/4 cup (90g) powdered confectioner’s sugar
- 1/2 teaspoon (3 ml) pure vanilla extract
Instructions
- Set your oven to 325°F and prepare an 8×8-inch or 9×9-inch baking pan by lining it with parchment paper.
- Begin the cake mixture by stirring together the melted butter, vegetable oil, and brown sugar in a large bowl until well blended. Add the egg and whisk until the mixture is smooth. Incorporate the pumpkin puree and vanilla extract, followed by the milk, mixing thoroughly after each addition.
- Introduce the baking powder, baking soda, salt, and pumpkin pie spice to the mixture, ensuring even distribution.
- Gradually incorporate half of the flour, mixing gently until just combined. Add the rest of the flour and the chopped pecans, folding them in gently until fully mixed.
- Transfer the batter into the lined baking pan, spreading it out evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Note that a 9-inch cake will likely finish closer to 25 minutes. Once baked, allow the cake to cool on a wire rack.
- For the frosting, beat together the softened cream cheese, softened butter, powdered sugar, and vanilla extract in a medium bowl using an electric hand mixer until the mixture is smooth, creamy, and fluffy. Evenly spread the frosting over the cooled cake and sprinkle with additional toasted pecans for garnish.
Notes
- Enhance the nutty flavor by incorporating toasted pecans into the cake batter.
- Soften the cream cheese and butter before preparing the frosting for a velvety texture.
- Sprinkle extra toasted pecans on top of the frosted cake for a delightful and visually appealing finish.
