  • 3/4 cup (165g) packed light brown sugar
  • 1 large egg
  • 1/2 cup (120ml) pure pumpkin puree
  • 1/2 teaspoon (5ml) pure vanilla extract
  • 1/2 cup (120ml) milk
  • 1 1/2 teaspoon (8 ml) baking powder
  • 1/4 teaspoon (1 ml) baking soda
  • 1/2 teaspoon (3 ml) salt
  • 1 teaspoon (5 ml) pumpkin pie spice
  • 1 1/2 cups (215g) all-purpose flour
  • 1/3 cup (45g) chopped toasted pecans plus extra for topping
  • 1/2 block (125g) cream cheese softened
  • 3 tablespoon (42g) unsalted butter softened
  • 3/4 cup (90g) powdered confectioner’s sugar
  • 1/2 teaspoon (3 ml) pure vanilla extract

Instructions

  1. Heat your oven to 325°F and prepare an 8×8-inch or 9×9-inch baking dish by lining it with parchment paper.
  2. Prepare the cake mixture by blending the melted butter, oil, and brown sugar in a large bowl, stirring well.
  3. Incorporate the egg, stirring until fully mixed in.
  4. Add the pumpkin puree and vanilla, then stir in the milk until combined.
  5. Stir in the baking powder, baking soda, salt, and pumpkin pie spice until the mixture is smooth.
  6. Gradually fold in half of the flour, mixing gently.
  7. Once mostly blended, add the rest of the flour and the chopped pecans, folding them in gently.
  8. Transfer the batter into the prepared baking dish and spread it evenly.
  9. Bake for 25-30 minutes, checking with a toothpick to ensure it comes out clean.
  10. For a 9-inch cake, baking time will be closer to 25 minutes.
  11. Once baked, move the cake to a wire rack to cool.
  12. To make the frosting, beat the softened cream cheese, softened butter, powdered sugar, and vanilla in a medium bowl using an electric mixer until the mixture is smooth and fluffy.
  13. Spread the frosting over the cooled cake evenly, then sprinkle additional toasted pecans on top.

Notes

  • Note text here
  • Use cream cheese and butter at room temperature for a smoother frosting.
  • Avoid overmixing the batter after adding flour to maintain a tender cake texture.
  • Ensure the cake is completely cooled before frosting to prevent the frosting from becoming runny.
