- 1 1/2 cups (215g) all-purpose flour
- 1/3 cup (45g) chopped toasted pecans plus extra for topping
- 1/2 block (125g) cream cheese softened
- 3 tablespoon (42g) unsalted butter softened
- 3/4 cup (90g) powdered confectioner’s sugar
- 1/2 teaspoon (3 ml) pure vanilla extract
Instructions
- Heat your oven to 325°F and prepare an 8×8-inch or 9×9-inch baking dish by lining it with parchment paper.
- Prepare the cake mixture by blending the melted butter, oil, and brown sugar in a large bowl, stirring well.
- Incorporate the egg, stirring until fully mixed in.
- Add the pumpkin puree and vanilla, then stir in the milk until combined.
- Stir in the baking powder, baking soda, salt, and pumpkin pie spice until the mixture is smooth.
- Gradually fold in half of the flour, mixing gently.
- Once mostly blended, add the rest of the flour and the chopped pecans, folding them in gently.
- Transfer the batter into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes, checking with a toothpick to ensure it comes out clean.
- For a 9-inch cake, baking time will be closer to 25 minutes.
- Once baked, move the cake to a wire rack to cool.
- To make the frosting, beat the softened cream cheese, softened butter, powdered sugar, and vanilla in a medium bowl using an electric mixer until the mixture is smooth and fluffy.
- Spread the frosting over the cooled cake evenly, then sprinkle additional toasted pecans on top.
