- 24 ladyfinger cookies
- Cocoa powder for dusting
Instructions
- In a large mixing bowl, beat the heavy cream until stiff peaks form.
- In another bowl, combine mascarpone cheese, pumpkin puree, and powdered sugar.
- Add vanilla extract, cinnamon, nutmeg, ginger, and cloves to the mascarpone mixture.
- Gently fold the whipped cream into the mascarpone mixture until smooth.
- Pour the cooled coffee into a shallow dish.
- Dip each ladyfinger briefly into the coffee, ensuring they are soaked but not soggy.
- Arrange a layer of soaked ladyfingers in the bottom of a serving dish.
- Spread half of the pumpkin-mascarpone mixture over the ladyfingers.
- Add another layer of soaked ladyfingers on top of the pumpkin mixture.
- Spread the remaining pumpkin-mascarpone mixture over the second layer of ladyfingers.
- Smooth the top with a spatula for an even surface.
- Dust the top generously with cocoa powder.
- Refrigerate the tiramisu for at least 4 hours or overnight to set.
- Serve chilled, cutting into squares as needed.
