Ingredients

  • 55 g dutch processed cocoa (1/2 cup / 2oz)
  • 260 g plain (all purp) flour (2 cups / 9oz)
  • 100 g dark brown sugar (1/2 cup / 3.5 oz)
  • 50 g white granulated sugar (1/4 cup / 1.8 oz)
  • 2 teaspoon (10 ml) s baking powder
  • 1/2 teaspoon (3 ml) baking (bicarb) soda
  • 1/4 teaspoon (1 ml) salt
  • 1 cup dark chocolate chips (200g / 7oz)
  • 2 large eggs
  • 1 cup whole buttermilk (250 ml)(notes)
  • 1/2 cup (120 ml) neutral flavoured vegetable oil (1/2 cup (120 ml) / 4oz (113 g)) (notes)
  • 1 teaspoon (5 ml) vanilla

Instructions

  1. Heat your oven to 180°C / 350°F / 160°C if using a fan setting. Prepare a loaf pan with a 6-cup capacity (approximately 8×4 inches) by greasing it and lining it with parchment paper.
  2. If the cocoa has clumps, sift it into a large mixing bowl. Add in the flour, dark brown sugar, white sugar, baking powder, baking soda, and salt, and whisk them together.
  3. Set aside ¼ cup of the chocolate chips and incorporate the remaining ones into the mixture. Stir thoroughly and set it aside.
  4. In a different bowl, beat the eggs, buttermilk, vegetable oil, and vanilla until they are well combined.
  5. Create a hollow in the middle of the dry mixture and pour in the liquid mixture. Gently fold the ingredients with a spatula until they are just mixed.
  6. Pour the batter into the prepared loaf tin, smooth the surface, and sprinkle the reserved chocolate chips on top.
  7. Place in the oven and bake for 50-55 minutes, or until a toothpick inserted into the center comes out mostly clean, avoiding the chocolate chips.
  8. Allow the cake to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely. Enjoy warm for melty chocolate chips or at room temperature once the chocolate has solidified.
