- 55 g dutch processed cocoa (1/2 cup / 2oz)
- 260 g plain (all purp) flour (2 cups / 9oz)
- 100 g dark brown sugar (1/2 cup / 3.5 oz)
- 50 g white granulated sugar (1/4 cup / 1.8 oz)
- 2 teaspoon (10 ml) s baking powder
- 1/2 teaspoon (3 ml) baking (bicarb) soda
- 1/4 teaspoon (1 ml) salt
- 1 cup dark chocolate chips (200g / 7oz)
- 2 large eggs
- 1 cup whole buttermilk (250 ml)(notes)
- 1/2 cup (120 ml) neutral flavoured vegetable oil (1/2 cup (120 ml) / 4oz (113 g)) (notes)
- 1 teaspoon (5 ml) vanilla
Instructions
- Heat your oven to 180°C / 350°F / 160°C if using a fan setting. Prepare a loaf pan with a 6-cup capacity (approximately 8×4 inches) by greasing it and lining it with parchment paper.
- If the cocoa has clumps, sift it into a large mixing bowl. Add in the flour, dark brown sugar, white sugar, baking powder, baking soda, and salt, and whisk them together.
- Set aside ¼ cup of the chocolate chips and incorporate the remaining ones into the mixture. Stir thoroughly and set it aside.
- In a different bowl, beat the eggs, buttermilk, vegetable oil, and vanilla until they are well combined.
- Create a hollow in the middle of the dry mixture and pour in the liquid mixture. Gently fold the ingredients with a spatula until they are just mixed.
- Pour the batter into the prepared loaf tin, smooth the surface, and sprinkle the reserved chocolate chips on top.
- Place in the oven and bake for 50-55 minutes, or until a toothpick inserted into the center comes out mostly clean, avoiding the chocolate chips.
- Allow the cake to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely. Enjoy warm for melty chocolate chips or at room temperature once the chocolate has solidified.
