Ingredients

Scale
  • 1 tablespoon vegetable oil (15 ml)
  • 1 tablespoon vegetable butter (15 ml)
  • 1 medium onion (diced)
  • 1 teaspoon (5 ml) fresh ginger (finely minced or grated (or use paste))
  • 23 cloves garlic (finely minced or crushed)
  • 1 1/2 pounds (680 g) about 23 boneless, skinless chicken breasts, cut into 3/4-inch chunks
  • 4 tablespoons tomato paste (or 240 ml can of tomato sauce)
  • 1 tablespoon (15 ml) garam masala
  • 1 teaspoon (5 ml) chili powder (or paprika, adjust to taste)
  • 1 teaspoon (5 ml) Cumin
  • 1 teaspoon (5 ml) salt
  • 1/4 teaspoon (1 ml) black pepper
  • 1 cup coconut milk (240 ml) (sub for almond milk or soy milk for low fat)
  • Hot cooked rice and naan for serving

Instructions

  1. Warm up a large frying pan or medium pot on medium-high heat. Introduce the oil, butter, and chopped onions, cooking the onions until they achieve a light golden hue, which should take about 3-4 minutes. Incorporate the ginger and garlic, cooking for 30 seconds while stirring to avoid burning.
  2. Add the chicken pieces, tomato paste, and spices. Stir and cook for 5-6 minutes until everything is thoroughly cooked.
  3. Pour in the coconut milk and allow the mixture to gently simmer for 8-10 minutes, stirring now and then. Serve this dish with a side of hot, cooked rice or naan bread.

Notes

  • For a lighter option, swap coconut milk with almond or soy milk to reduce fat.
  • Marinate chicken in yogurt and spices before cooking for enhanced flavor.
  • Adjust chili powder or paprika to taste preference for spiciness level.
