- 1 tbsp (15 ml) olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 jalapeno, minced
- 30 oz (850 g) white beans, rinsed and drained
- 4 oz (115 g) diced green chiles
- 3 to 4 cups (720 to 960 ml) chicken broth (depending on how thick you want your chili)
- Juice of 1 lime
- 1 tsp (5 ml) ground cumin
- 1/2 tsp (3 ml) chili powder
- 1/4 tsp (1 ml) dried oregano
- 2 cups (240 g) shredded cooked beef
- 1/3 cup (80 ml) chopped cilantro
- Salt and black pepper, to taste
- Optional toppings: avocado slices, shredded cheese, dairy-free sour cream, cilantro
Instructions
- In a large pot, warm the olive oil over medium-high heat. Sauté the onion until it becomes see-through, roughly 3 to 4 minutes. Incorporate the garlic and jalapeno, cooking for an additional 2 minutes.
- Mix in the white beans, green chiles, chicken broth, lime juice, cumin, chili powder, oregano, beef, cilantro, salt, and pepper. Stir everything together and allow it to simmer on low heat for 15 minutes.
- Spoon the chili into bowls and garnish with your choice of toppings.
Notes
- For a vegetarian option, swap out the shredded cooked beef with extra white beans or your preferred meat alternative.
- Enhance the flavor by using fire-roasted diced green chiles instead of regular diced green chiles.
- Adjust the spiciness by adding more or less jalapeno or a touch of cayenne pepper.
