Instructions
- Collect all necessary items. Set your oven to 325°F (165°C) and let it heat up. Prepare two 8×4-inch loaf pans by greasing and dusting them with flour.
- In a large bowl, combine the flour, salt, baking powder, baking soda, and cinnamon by sifting them together.
- In another large bowl, use an electric mixer to blend the eggs, oil, sugar, and vanilla extract until smooth. Gradually incorporate the dry mixture into this and mix thoroughly.
- Fold in the grated zucchini and chopped walnuts until they are evenly distributed throughout the batter.
- Divide the batter evenly between the two prepared loaf pans.
- Place in the preheated oven and bake until a toothpick inserted into the middle comes out clean, which should take between 40 and 60 minutes. Allow them to cool in the pans on a wire rack for about 20 minutes.
- Carefully run a table knife along the edges to release the loaves. Turn them out onto a wire rack and let them cool down fully.
