  • 25 cups white sugar (450g)
  • 3 teaspoons (15 ml) vanilla extract
  • 2 cups grated zucchini (300g)
  • 1 cup chopped walnuts (120g)

Instructions

  1. Collect all necessary items. Set your oven to 325°F (165°C) and let it heat up. Prepare two 8×4-inch loaf pans by greasing and dusting them with flour.
  2. In a large bowl, combine the flour, salt, baking powder, baking soda, and cinnamon by sifting them together.
  3. In another large bowl, use an electric mixer to blend the eggs, oil, sugar, and vanilla extract until smooth. Gradually incorporate the dry mixture into this and mix thoroughly.
  4. Fold in the grated zucchini and chopped walnuts until they are evenly distributed throughout the batter.
  5. Divide the batter evenly between the two prepared loaf pans.
  6. Place in the preheated oven and bake until a toothpick inserted into the middle comes out clean, which should take between 40 and 60 minutes. Allow them to cool in the pans on a wire rack for about 20 minutes.
  7. Carefully run a table knife along the edges to release the loaves. Turn them out onto a wire rack and let them cool down fully.
