- 2 large leeks, cleaned and chopped
- 3 medium potatoes, peeled and diced
- 1 onion, chopped
- 4 cups vegetable broth
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (such as thyme or parsley) for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and leeks, sautéing until softened, about 5 minutes.
- Stir in the garlic and cook for another minute.
- Add the diced potatoes and vegetable broth, bringing the mixture to a boil.
- Reduce heat and let it simmer until the potatoes are tender, about 15-20 minutes.
- Use an immersion blender or a regular blender to puree the soup until smooth.
- Season with salt and pepper to taste.
- Serve the soup hot, garnished with fresh herbs.

Experiment with seasonings and add a pinch of nutmeg for additional warmth.
