Ingredients
Scale
- 2 cups (260 g) all-purpose flour
- ½ cup (100 g) granulated sugar
- 2 teaspoon (10 ml) s baking powder
- 1/2 teaspoon (3 ml) salt
- ¾ cup (180 ml) milk, room temperature
- ½ cup (114 g) unsalted butter, melted and cooled
- 2 large eggs, room temperature
- 2 tablespoon (30 ml) s coarse sugar, optional
Instructions
- Warm up the oven to 350°F and prepare a muffin tin with paper liners; put it aside.
- In a small bowl, mix together the flour, granulated sugar, baking powder, and salt.
- In a larger bowl, blend the milk, melted butter, and eggs until they are fully mixed.
- Pour the dry ingredients into the wet ingredients and gently fold them in with a silicone spatula until just mixed.
- Evenly portion the mixture into the muffin liners and, if desired, sprinkle coarse sugar on top.
- Place in the oven and bake for 20-25 minutes, or until a toothpick inserted in the middle comes out mostly clean with a few moist crumbs.
- Move the muffins to a wire rack to cool down entirely. They are best enjoyed fresh on the day of baking, though they can be kept for later.
Notes
- Allow the melted butter to cool before combining with milk and eggs to prevent curdling.
- Utilize room-temperature eggs and milk for smoother batter and even baking.
- Gently fold dry ingredients into the wet mixture, avoiding overmixing to keep muffins light.
