- 1 can coconut milk
- 4 cups vegetable broth
- 200g rice noodles
- 1 cup cilantro, chopped
- 1 cup basil, chopped
- Juice of 1 lime
- Salt to taste
- Optional: sliced vegetables (bell peppers, carrots, etc.)
Instructions
- In a large pot, heat the red curry paste over medium heat for 1-2 minutes until fragrant.
- Add the coconut milk and vegetable broth, then bring to a simmer.
- Stir in the rice noodles and cook according to package instructions.
- If using, add sliced vegetables and cook until tender.
- Remove from heat and stir in the chopped cilantro, basil, and lime juice.
- Season with salt to taste.
- Serve hot and enjoy!
