Delicious classic cheesecake topped with fresh berries that’s perfect for special occasions
Ingredients

- 2 cups graham cracker crumbs
- 1/2 cup butter, melted
- 1/4 cup sugar
- 4 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 eggs
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- 1/4 cup berry preserves
Instructions
- Preheat oven to 325°F (165°C). Combine graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl.
- Press the mixture into the bottom of a 9-inch springform pan.
- Beat cream cheese until smooth. Gradually add 1 cup sugar and vanilla, beating until well blended.
- Add eggs one at a time, beating just until blended after each addition.
- Pour batter over crust. Bake for 55-60 minutes or until center is almost set.
- Run a knife around rim of pan to loosen cake. Cool before removing rim. Refrigerate for at least 6 hours or overnight.
- Before serving, arrange fresh berries on top and brush with warmed berry preserves.
Notes
- Make sure all ingredients are at room temperature before starting.
- To prevent cracks, avoid overmixing the batter once eggs are added.
- For clean slices, dip knife in hot water before cutting.
- Store leftovers in the refrigerator for up to 5 days.
