Description

Delicious classic cheesecake topped with fresh berries that’s perfect for special occasions


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1/4 cup sugar
  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1/4 cup berry preserves

Instructions

  1. Preheat oven to 325°F (165°C). Combine graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl.
  2. Press the mixture into the bottom of a 9-inch springform pan.
  3. Beat cream cheese until smooth. Gradually add 1 cup sugar and vanilla, beating until well blended.
  4. Add eggs one at a time, beating just until blended after each addition.
  5. Pour batter over crust. Bake for 55-60 minutes or until center is almost set.
  6. Run a knife around rim of pan to loosen cake. Cool before removing rim. Refrigerate for at least 6 hours or overnight.
  7. Before serving, arrange fresh berries on top and brush with warmed berry preserves.

Notes

  • Make sure all ingredients are at room temperature before starting.
  • To prevent cracks, avoid overmixing the batter once eggs are added.
  • For clean slices, dip knife in hot water before cutting.
  • Store leftovers in the refrigerator for up to 5 days.
