Ingredients

  • 2 cups fresh blueberries (or frozen, thawed and drained)
  • 1 jalapeño pepper, seeded and finely diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon honey
  • 1/4 teaspoon salt

Instructions

  1. Set aside 1/2 cup of whole blueberries for adding just before serving.
  2. In a food processor, pulse the remaining 1 1/2 cups blueberries a few times until coarsely chopped.
  3. Transfer to a bowl and add diced jalapeño, red onion, and cilantro.
  4. Add lime juice, honey, and salt. Stir to combine.
  5. Refrigerate for at least 30 minutes to allow flavors to meld.
  6. Just before serving, fold in the reserved 1/2 cup whole blueberries.
  7. Serve with tortilla chips or as a topping for grilled chicken or fish.

Notes

  • For a spicier salsa, leave some of the jalapeño seeds in.
  • This salsa is best enjoyed fresh but can be stored in the refrigerator for up to 2 days.
