- 4 Russet potatoes
- 2 tablespoons Olive oil
- 1 tablespoon Kosher salt
- 4 tablespoons Butter
- 1 cup Sour cream
- 1/4 cup Chives, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- Scrub the potatoes thoroughly and dry them.
- Prick each potato several times with a fork.
- Rub each potato with olive oil and sprinkle with kosher salt.
- Place the potatoes directly on the oven rack and bake for about 45-60 minutes, until the skin is crispy and the inside is soft when pierced with a fork.
- Remove from oven, let cool for a few minutes, then cut open and fluff the insides with a fork.
- Top with butter, sour cream, and chopped chives as desired.
