Description

Ingredients

  • 4 Russet potatoes
  • 2 tablespoons Olive oil
  • 1 tablespoon Kosher salt
  • 4 tablespoons Butter
  • 1 cup Sour cream
  • 1/4 cup Chives, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Scrub the potatoes thoroughly and dry them.
  3. Prick each potato several times with a fork.
  4. Rub each potato with olive oil and sprinkle with kosher salt.
  5. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, until the skin is crispy and the inside is soft when pierced with a fork.
  6. Remove from oven, let cool for a few minutes, then cut open and fluff the insides with a fork.
  7. Top with butter, sour cream, and chopped chives as desired.
