Description

A comforting dish combining creamy Arborio rice with fresh peas, perfect for family dinners or gatherings.


Ingredients

  • 1 cup Arborio rice
  • 4 cups vegetable or chicken broth
  • 1 cup fresh or frozen peas
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a pot over medium heat and sauté the chopped onion until translucent.
  2. Add the Arborio rice and cook for a couple of minutes, stirring frequently.
  3. Gradually add the broth, one ladle at a time, stirring continuously until the liquid is absorbed before adding more.
  4. After about 15 minutes, add the peas and continue to cook until the rice is al dente and creamy.
  5. Remove from heat and stir in the Parmesan cheese.
  6. Season with salt and pepper to taste, garnish with parsley, and serve warm.

Notes

Allow the dish to rest briefly after cooking to enhance the flavors.
