Ingredients

- 1 cup Arborio rice
- 4 cups vegetable or chicken broth
- 1 cup fresh or frozen peas
- 1 onion, finely chopped
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a pot over medium heat and sauté the chopped onion until translucent.
- Add the Arborio rice and cook for a couple of minutes, stirring frequently.
- Gradually add the broth, one ladle at a time, stirring continuously until the liquid is absorbed before adding more.
- After about 15 minutes, add the peas and continue to cook until the rice is al dente and creamy.
- Remove from heat and stir in the Parmesan cheese.
- Season with salt and pepper to taste, garnish with parsley, and serve warm.
Notes
Allow the dish to rest briefly after cooking to enhance the flavors.
