- 2 cans coconut milk (refrigerated overnight), or 1.5 cups coconut cream
- 200g dark chocolate (vegan)
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
- Shaved chocolate (for garnish)
- Fresh berries (optional, for garnish)
Instructions
- Refrigerate coconut milk cans for at least 8 hours or overnight.
- Open the cans and scoop out only the solidified cream portion into a mixing bowl.
- Break the dark chocolate into pieces and melt in a heatproof bowl over simmering water or in the microwave in short bursts.
- Let the melted chocolate cool slightly, then add the maple syrup, vanilla extract, and salt. Mix well.
- Whip the coconut cream until light and fluffy using an electric mixer.
- Gently fold the chocolate mixture into the whipped coconut cream until fully incorporated.
- Divide the mousse into serving dishes and tap gently on the counter to remove any air bubbles.
- Refrigerate for at least 4 hours to set.
- Garnish with shaved chocolate and fresh berries before serving.
Notes
- For best results, refrigerate the coconut milk cans upside down.
- Use high-quality dark chocolate for the richest flavor.
- The mousse can be made up to 2 days in advance and kept refrigerated.
- If you can’t find coconut cream, the solid part from refrigerated coconut milk works just as well.
