Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces pasta (penne or fettuccine)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 4 ounces cream cheese, softened
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  2. Cook pasta according to package directions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 30 seconds until fragrant.
  4. Add shrimp to the skillet and cook until they just turn pink and form a ‘C’ shape, about 2-3 minutes. Remove shrimp and set aside.
  5. In the same skillet, add heavy cream, cream cheese, and Parmesan. Stir until smooth and slightly thickened.
  6. Add Italian seasoning, salt, black pepper, and red pepper flakes if using. Stir to combine.
  7. Combine the cooked pasta, shrimp, and Alfredo sauce in a large bowl. Toss until everything is well coated.
  8. Transfer the mixture to the prepared baking dish and top with shredded mozzarella cheese.
  9. Bake for 20-25 minutes until bubbly and the cheese is melted and lightly golden.
  10. Let stand for 5 minutes before serving. Garnish with fresh parsley.
