Ingredients

- 1 head garlic
- 1 tsp olive oil
- 2 pounds red potatoes (washed and cut into quarters)
- Kosher salt
- 6 tablespoons butter
- 3/4 cup half and half
- Fresh ground pepper
Instructions
- Preheat your oven to 375°F.
- Cut the top 1/4 inch off of the garlic head. Wrap the garlic head in foil and drizzle olive oil over it. Close the foil around the garlic and roast in the oven for about an hour.
- Place washed and cut potatoes in a large pot and cover them with cold water. Add 1 teaspoon of salt and bring to a boil. Simmer for 15 minutes or until fork-tender.
- Drain the potatoes and return them to the pot. Add the roasted garlic cloves, butter, and warmed half and half. Season with salt and fresh ground pepper. Mash until creamy with some lumps.
- Garnish with fresh herbs and additional butter before serving.
Notes
For a lighter consistency, consider using more half and half. Adjust butter based on your preference for creaminess. Fresh herbs like thyme or parsley can enhance flavor.
