- 2 lbs Yukon Gold potatoes
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup crumbled feta cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 425°F (220°C)
- Cut potatoes into 1-inch cubes
- Toss potatoes with olive oil, garlic, oregano, salt, and pepper
- Spread on baking sheet in single layer
- Roast for 40-45 minutes, turning halfway
- Sprinkle with feta and parsley before serving
Notes
- Use Yukon Gold potatoes for best results as they become crispy on the outside while staying creamy inside
- Make sure potatoes are evenly sized for consistent cooking
