- 2 tablespoons honey
- 1 teaspoon ground cinnamon

- 1/4 teaspoon ground black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and chop the sweet potatoes into 1-inch cubes, ensuring they are approximately the same size for even roasting.
- In a large bowl, combine the olive oil, honey, cinnamon, salt, and black pepper. Mix until well combined.
- Add the sweet potato cubes to the bowl and toss them in the mixture, making sure they are evenly coated.
- Spread the sweet potatoes out on a baking sheet in a single layer. Avoid crowding them.
- Roast in the preheated oven for about 25-30 minutes or until tender and golden brown, flipping halfway through cooking.
- Remove from the oven and let them cool slightly before serving. If desired, sprinkle with chopped fresh parsley before serving.
