  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 2 ripe mangoes, diced
  • 1 red bell pepper, finely chopped
  • 1/4 cup red onion, minced
  • 1 jalapeño, seeded and minced
  • 2 tablespoons fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Mix honey, soy sauce, and garlic powder to create the marinade.
  2. Pat salmon fillets dry and place in a shallow dish. Pour marinade over salmon and let sit for 30 minutes to 2 hours in refrigerator.
  3. While salmon marinates, prepare the mango salsa by combining diced mango, bell pepper, red onion, jalapeño, lime juice, and cilantro in a bowl. Season with salt and pepper.
  4. Preheat oven to 400°F (200°C) or prepare grill to medium-high heat.
  5. Remove salmon from marinade and cook for 12-15 minutes until just cooked through.
  6. Top each salmon fillet with a generous portion of mango salsa and serve immediately.
