- 4 wild-caught salmon fillets
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- 2 ripe mangoes, diced
- 1 red bell pepper, finely chopped
- 1/4 cup red onion, minced
- 1 jalapeño, seeded and minced
- 2 tablespoons fresh lime juice
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Mix honey, soy sauce, and garlic powder to create the marinade.
- Pat salmon fillets dry and place in a shallow dish. Pour marinade over salmon and let sit for 30 minutes to 2 hours in refrigerator.
- While salmon marinates, prepare the mango salsa by combining diced mango, bell pepper, red onion, jalapeño, lime juice, and cilantro in a bowl. Season with salt and pepper.
- Preheat oven to 400°F (200°C) or prepare grill to medium-high heat.
- Remove salmon from marinade and cook for 12-15 minutes until just cooked through.
- Top each salmon fillet with a generous portion of mango salsa and serve immediately.
