Ingredients

  • 6 cups Rice Krispies cereal (or gluten-free crispy rice cereal)
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • 1 teaspoon sea salt
  • 1/2 teaspoon vanilla extract
  • 10 oz marshmallows
  • Flaky sea salt for garnish

Instructions

  1. Line a 9×9 inch baking pan with parchment paper and lightly grease with butter or cooking spray.
  2. Measure out Rice Krispies cereal into a large bowl and set aside.
  3. In a clean, heavy-bottomed saucepan, combine sugar and water. Heat over medium-high heat without stirring until sugar begins to melt.
  4. Once sugar starts to color, gently swirl the pan occasionally to ensure even cooking. Cook until the caramel reaches a deep amber color (around 350°F if using a thermometer).
  5. Remove from heat and carefully add heavy cream (mixture will bubble vigorously). Stir until combined.
  6. Add butter, 1 teaspoon sea salt, and vanilla extract. Stir until smooth.
  7. Add marshmallows to the caramel and return to low heat, stirring constantly until completely melted and incorporated.
  8. Pour the marshmallow-caramel mixture over the Rice Krispies cereal and quickly fold together until all cereal is coated.
  9. Transfer the mixture to the prepared pan and press down evenly with a greased spatula or parchment paper.
  10. Let cool for at least 1 hour before cutting into squares.
  11. Just before serving, sprinkle with flaky sea salt for the perfect finish.

Notes

  • For best results, use fresh marshmallows that are soft and pliable.
  • If your caramel hardens too quickly, warm it gently over low heat until it’s workable again.
  • Store in an airtight container for up to 3 days at room temperature.
