- 6 cups Rice Krispies cereal (or gluten-free crispy rice cereal)
- 1 cup granulated sugar
- 1/4 cup water
- 1/2 cup heavy cream
- 4 tablespoons butter
- 1 teaspoon sea salt
- 1/2 teaspoon vanilla extract
- 10 oz marshmallows
- Flaky sea salt for garnish
Instructions
- Line a 9×9 inch baking pan with parchment paper and lightly grease with butter or cooking spray.
- Measure out Rice Krispies cereal into a large bowl and set aside.
- In a clean, heavy-bottomed saucepan, combine sugar and water. Heat over medium-high heat without stirring until sugar begins to melt.
- Once sugar starts to color, gently swirl the pan occasionally to ensure even cooking. Cook until the caramel reaches a deep amber color (around 350°F if using a thermometer).
- Remove from heat and carefully add heavy cream (mixture will bubble vigorously). Stir until combined.
- Add butter, 1 teaspoon sea salt, and vanilla extract. Stir until smooth.
- Add marshmallows to the caramel and return to low heat, stirring constantly until completely melted and incorporated.
- Pour the marshmallow-caramel mixture over the Rice Krispies cereal and quickly fold together until all cereal is coated.
- Transfer the mixture to the prepared pan and press down evenly with a greased spatula or parchment paper.
- Let cool for at least 1 hour before cutting into squares.
- Just before serving, sprinkle with flaky sea salt for the perfect finish.
Notes
- For best results, use fresh marshmallows that are soft and pliable.
- If your caramel hardens too quickly, warm it gently over low heat until it’s workable again.
- Store in an airtight container for up to 3 days at room temperature.
- For cleaner cuts, slightly wet your knife before slicing the treats.
