Description

  • 1 can Ro-tel tomatoes

  • 1 cup corn
  • 1 cup Tex-Mex cheese

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then cook in the skillet until browned and cooked through, about 6-7 minutes per side.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add black beans, Ro-tel tomatoes, corn, and southwest spices. Stir and simmer for 5 minutes.
  5. Return chicken to the skillet, top with Tex-Mex cheese, and cover until the cheese is melted.
  6. Serve warm.
