- 1 can black beans
- 1 can Ro-tel tomatoes

- 1 cup corn
- 1 cup Tex-Mex cheese

Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with salt and pepper, then cook in the skillet until browned and cooked through, about 6-7 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add black beans, Ro-tel tomatoes, corn, and southwest spices. Stir and simmer for 5 minutes.
- Return chicken to the skillet, top with Tex-Mex cheese, and cover until the cheese is melted.
- Serve warm.
