Ingredients

  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • 2 cups cooked rice or pasta (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat; drain excess fat.
  3. Add the chopped onion and garlic, cooking until softened.
  4. Stir in the mixed vegetables, diced tomatoes, beef broth, Worcestershire sauce, salt, and pepper.
  5. Simmer for 10 minutes.
  6. Transfer the mixture to a casserole dish, and if using, mix in cooked rice or pasta.
  7. Sprinkle cheese on top if desired.
  8. Cover with foil and bake for 25-30 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly.
  9. Serve hot.

For best results, use fresh vegetables and consider adding a splash of beef broth when reheating leftovers to maintain moisture.
