- 1 lb ground beef
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- 2 cups cooked rice or pasta (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat; drain excess fat.
- Add the chopped onion and garlic, cooking until softened.
- Stir in the mixed vegetables, diced tomatoes, beef broth, Worcestershire sauce, salt, and pepper.
- Simmer for 10 minutes.
- Transfer the mixture to a casserole dish, and if using, mix in cooked rice or pasta.
- Sprinkle cheese on top if desired.
- Cover with foil and bake for 25-30 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly.
- Serve hot.
Notes
For best results, use fresh vegetables and consider adding a splash of beef broth when reheating leftovers to maintain moisture.
