Ingredients

- 1 cup rolled oats
- 2 cups water or vegetable broth
- 1 ripe avocado, diced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup spinach or kale, chopped
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- Optional toppings: Poached egg, Feta cheese, Red pepper flakes
Instructions
- In a saucepan, bring the water or vegetable broth to a boil.
- Add the rolled oats and cook according to package instructions, usually about 5 minutes, stirring occasionally.
- Once the oats are cooked, stir in the salt, pepper, and garlic powder.
- Remove from heat and gently fold in the diced avocado, cherry tomatoes, and chopped spinach or kale.
- Drizzle with olive oil and mix well.
- Serve warm, topped with your choice of optional toppings such as a poached egg, feta cheese, or red pepper flakes.
Notes
