  • 3 cups chicken broth
  • 1 whole red pepper (diced)
  • 1 green pepper (diced)
  • 3 celery stalks (diced)
  • 6 garlic cloves (minced)
  • 1/2 onion (diced)
  • 1 turkey tail
  • 2 turkey necks
  • 1 turkey leg
  • 1 lb bacon (chopped)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp adobo seasoning
  • 1/2 tsp Maggi seasoning
  • 1/2 tsp Cajun seasoning
  • 1/8 tsp red pepper flakes
  • 1 tsp all-purpose seasoning
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat.
  2. Add the chopped bacon and allow it to brown.
  3. Introduce the diced onion, celery, red pepper, green pepper, and minced garlic.
  4. Sauté for about five minutes until fragrant.
  5. Include the turkey tails, necks, and legs to the pot.
  6. Layer in the dried black-eyed peas followed by the chicken broth.
  7. Sprinkle in the spices and stir well, then bring to a gentle boil.
  8. Reduce the heat to low, cover, and let it simmer for about 60 minutes.
  9. Taste and adjust seasoning with salt and pepper.
  10. Continue simmering until black-eyed peas are tender and flavors meld beautifully.

Notes

Serve with warm cornbread or crusty bread. This dish freezes well, making it great for leftovers.
