- 3 cups chicken broth
- 1 whole red pepper (diced)
- 1 green pepper (diced)
- 3 celery stalks (diced)
- 6 garlic cloves (minced)
- 1/2 onion (diced)
- 1 turkey tail
- 2 turkey necks
- 1 turkey leg
- 1 lb bacon (chopped)
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp adobo seasoning
- 1/2 tsp Maggi seasoning
- 1/2 tsp Cajun seasoning
- 1/8 tsp red pepper flakes
- 1 tsp all-purpose seasoning
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat.
- Add the chopped bacon and allow it to brown.
- Introduce the diced onion, celery, red pepper, green pepper, and minced garlic.
- Sauté for about five minutes until fragrant.
- Include the turkey tails, necks, and legs to the pot.
- Layer in the dried black-eyed peas followed by the chicken broth.
- Sprinkle in the spices and stir well, then bring to a gentle boil.
- Reduce the heat to low, cover, and let it simmer for about 60 minutes.
- Taste and adjust seasoning with salt and pepper.
- Continue simmering until black-eyed peas are tender and flavors meld beautifully.
Notes
Serve with warm cornbread or crusty bread. This dish freezes well, making it great for leftovers.
