Instructions
- Preheat your oven to 350°F and coat a 9 x 5 loaf pan with a non-stick spray.
- Place the grated zucchini in a paper towel and squeeze gently to remove a little bit of the moisture; it’s not necessary to dry it completely.
- In a large mixing bowl, stir together the flour, baking powder, baking soda, and salt.
- In a separate smaller bowl, mix the milk with vinegar, allowing it to curdle slightly. Then blend in the vegetable oil and egg.
- Gently fold the milk mixture into the dry ingredients, ensuring not to over-stir to avoid a dense loaf.
- Incorporate the zucchini, cheddar cheese, and green onions into the mix, stirring just until everything is combined.
- Transfer the batter to the greased pan and place it in the oven, baking for about one hour at 350°F.
- The bread is ready when a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes before transferring it to a wire rack to continue cooling.
