  • 1 egg
  • 3 tablespoons (45 g) vegetable oil
  • 1 1/2 cups (170 g) grated sharp cheddar
  • 2 green onions, chopped

Instructions

  1. Preheat your oven to 350°F and coat a 9 x 5 loaf pan with a non-stick spray.
  2. Place the grated zucchini in a paper towel and squeeze gently to remove a little bit of the moisture; it’s not necessary to dry it completely.
  3. In a large mixing bowl, stir together the flour, baking powder, baking soda, and salt.
  4. In a separate smaller bowl, mix the milk with vinegar, allowing it to curdle slightly. Then blend in the vegetable oil and egg.
  5. Gently fold the milk mixture into the dry ingredients, ensuring not to over-stir to avoid a dense loaf.
  6. Incorporate the zucchini, cheddar cheese, and green onions into the mix, stirring just until everything is combined.
